Cheeseburger Mini Meatloaf

These little mini cheeseburger meatloaves are, hands down, one of my favorite things to make and pack for work lunches during the week. I pair them with some roasted veggies or tater tots if I'm feeling dangerous.

The next time I make these, Jack has suggested cooking up some bacon, chopping it up, and mixing it in with the meat mixture. That's not surprising he'd suggest that, is it? He's right...it would be pretty good. Enjoy!


Cheeseburger Mini Meatloaves 

1lb extra lean ground beef (96/4)
1/3 cup bread crumbs
1 large egg
1/4 cup finely chopped onion
7 Tbls ketchup, divided
1 Tbls dill relish
1 Tbls worcestershire sauce
1 tsp mustard
3/4 cup reduced fat (2%) shredded cheddar cheese

Mix all together except for 5 tablespoons ketchup (two tablespoons goes into the meat mixture).

Divide mixture into five loaves. 

Spread one tablespoon of ketchup over each mini meatloaf.

Bake at 350 for 40-45 minutes.
