3 Ingredient Nutella Cookies

Every now and then, I get a hankerin' to bake - but not "complicated" bake. "Easy" bake. Know what I mean? These fit the bill perfectly. Just three ingredients...and who doesn't love Nutella? Bonus, they make a small batch so there aren't a ton of cookies staring at you, daring you to eat them all. 

The little black dots on the cookies are Hawaiian black lava salt Jack brought back from his Hawaiian adventures for me. You could use regular old sea salt or omit it entirely. Mike (from the mornings) was a fan of the salt; Jack wasn't - he said he was in the mood for pure sweetness. Clearly, I'm a fan of the sea salt. I think it just cuts the sweet a smidge.

1 cup of Nutella
1 cup of flour
1 egg
Pinch of sea salt, optional

Preheat oven to 350 degrees and line a sheet pan with parchment paper. 

Mix all ingredients with a wooden spoon or in the bowl of an electric mixer. The mixture will be thick.

Scoop into 2 Tbls sized balls (a medium cookie scoop is great for this), and use the bottom of a glass to press cookies flat. Sprinkle the tops with sea salt if using.

Bake for 7-9 minutes for until cookies are done (don't overbake them - that makes the cookies feel sad). 

Yield: 15 cookies.
