This is one of my favorite slow cooker meals during the fall/winter. I never in a million years would have thought this combo would work, but trust me that it does. It also freezes and reheats well!
Slow Cooker Cinnamon Chicken
(Recipe lightly modified from The Gracious Pantry)
1lb chicken breasts
1lb carrots, peeled and sliced thin
1 15 oz can light coconut milk
1 15 oz can tomato sauce
1 Tbls ground cinnamon
¼ tsp ground cloves
Line your slow cooker with a disposable liner for easy clean up.
Drop sliced carrots in the bottom of the slow cooker.
Place your raw chicken on top of carrots.
Pour coconut milk, tomato sauce, and spices on top and give a gentle stir.
Cook on high for 4-6 hours, or until the chicken easily falls apart.
