Every year at Christmas we like to try a new cookie recipe. With some family members needing to be gluten free, we wanted to make sure we had a cookie or two available for them. These are SO GOOD that it doesn't matter if you need to be gluten free or not. If you're an almond fan, you will LOVE these. They are sweet and almondy, easy to make, and hard to stop at just one.
Sweet Almond Cookies
10oz almond paste*
1 cup sugar
2 egg whites
1/2 tsp almond extract
Preheat oven to 325 and line two cookie sheets with parchment paper.
In a mixer bowl, combine almond paste and sugar on low speed until combined.
In a separate bowl, whisk egg whites until frothy. Add to almond mixture and mix until it makes a smooth paste.
Using a tablespoon cookie scoop, drop an even tablespoonful of dough on to the parchment. Sprinkle with powdered sugar if you wish.
Bake 20-25 minutes until brown. Leave on cookie sheets to cool.
Yield: 30 cookies
*Double check your almond paste to make sure it is gluten free. Surprisingly, not all almond paste is gluten free.
