Easy Big Mac Skillet Dinner
YOU GUYS. THIS WAS SO GOOD.
I’ve seen this recipe for the Big Mac Casserole floating around. It looks so good, but I’m watching the bread. Besides, if I’m choosing, I’d rather have fries! I decided to modify the recipe to make it even easier, plus no need to turn on the oven. I whipped this up in less than 15 minutes. Since I do Weight Watchers, I opted to use super lean ground beef and cheese, but if you’re not, feel free to go full fat!
Big Mac Skillet Dinner
1lb 94/6 ground beef
1 medium onion, diced small
1 cup dill pickles, chopped small
5 Velveeta cheese singles
1 Tbls mustard
1/4 tsp salt
Ken’s Light Thousand Island Dressing
Shredded iceberg lettuce (I bought the pre-shredded lettuce bag from the store!)
In a large skillet, sauté onions for three minutes in a skillet sprayed with non-stick cooking spray. Add beef and pickles, and cook until beef is cooked through. Stir in mustard and salt. Turn heat to low, top with cheese slices. In a bowl or plate, place a bed of lettuce. Top with 1/4 meat mixture. Drizzle 2 Tbls lite thousand island dressing (3SP).
For those doing Weight Watchers, it’s 4SP for the meat mixture (1/4 of the pan); 11SP for entire meal served with 2 Tbls Ken’s Light Thousand Island Dressing and 3oz Alexia House Cut Fries.
